Cornbread Salad

INGREDIENTS

1 pkg. ranch style salad dressing mix

8 oz. sour cream

1 C. mayonnaise

2 cans (16 oz.) pinto beans, drained

1 pkg. Tex-Mex Cornbread cooked in 9" pan, crumbled

3 lrg. tomatoes, chopped

1/2 C. green pepper, chopped

1/2 C. green onions, chopped

2 C. shredded cheddar cheese

17 oz. (1 can) whole Kernal corn, drained

1 tomato, cut into wedges for garnish

3 slices of bacon, fried to crisp, then crumbled for garnish

DIRECTIONS

Combine salad dressing mix, sour cream, and mayonnaise; set aside. Place half of crumbled cornbread in bottom of a large serving bowl. Top with half of pinto beans. In a medium bowl, combine tomatoes, peppers, and onions. Layer half of mixture over beans. Top with half of cheese, bacon, corn, and reserved salad dressing. Repeat layer like above, using remaining ingredients. Garnish dish. Cover and chill at least 2 hours before serving.

To prepare Tex-Mex cornbread, add 4 oz. (1 can) chopped chilies to your favorite cornbread recipe.
