Roger's Scented Tips
Apple Pie
Serves 8.
Ingredients
For the crust:
3 cups flour
2 tsp grated lemon peel
1 cup butter
8 tbsp ice water
1 egg
1 tbsp sugar
For the filling:
4 cups peeled and thinly sliced Granny Smith apples
1 cup sugar
1 tsp cinnamon
¼ cup cornstarch
¼ cup butter
Directions
1. Preheat the oven to 400° F.
2. To prepare the crust, mix flour and lemon peel together with a wire whisk. Using a pastry cutter, two knives, or a clean pair of hands, cut in the butter. The dough should resemble coarse meal.
3. Add ice water, one tablespoon at a time, and blend until the dough can be gathered into a ball. Divide the dough and pat into two flat disks. Wrap both pieces of dough in plastic wrap and refrigerate for an hour.
4. To prepare the filling, mix the sugar, cinnamon, and cornstarch together with a wire whisk. Add apples and mix until the dry ingredients coat the apples evenly.
5. Roll out one piece of the dough on a floured surface until you have a circle 11 inches in diameter. Place dough at the bottom of a 9-inch pie plate. Trim excess.
6. Fill with apple mixture. Dot with small pieces of butter.
7. Roll out the second piece of dough on a floured surface until you have a circle 10 inches in diameter. Place on top of filling. Fold edges of top crust over the bottom, crimping them together.
8. Beat the egg. Cut steam slits on the top crust of the pie, and brush the egg over the whole top crust. Sprinkle the sugar on top.
9. Bake for 20 minutes at 400° F. Then for 30 minutes at 350° F. When the crust is a deep golden brown and the filling is bubbling through the steam slits, remove from oven and cool to room temperature before serving.
