Blueberry Muffins
Makes 1 dozen.
Ingredients
6 tbsp butter
1 cup blueberries (fresh or frozen)
2 cups + 1 tbsp flour
2/3 cup sugar
2 tsp baking powder
½ tsp cinnamon
¼ tsp baking soda
¼ tsp salt
1 egg
1 cup buttermilk
1 tsp vanilla extract
Directions
- Preheat the oven to 350° F.
- Melt the butter and let it cool.
- Toss the blueberries with 1 tablespoon flour.
- Mix together the 2 cups flour, sugar, baking powder, cinnamon, baking soda, and salt. Make a well in the center of the mixture.
- In a separate bowl, mix together the egg and buttermilk using a wire whisk. Add in the vanilla extract and melted butter. Mix. Pour the buttermilk mixture into the well. Fold in buttermilk mixture until just combined. Carefully fold in blueberries. Be careful not to overmix or muffins will be hard.
- Pour batter into a greased muffin pan. Bake for 30 to 35 minutes. Insert a cake tester or toothpick into the center of a muffin. If it comes out clean, the muffins are done.
- Cool muffins in pan for 10 minutes, then remove and cool on a wire rack.
