Roger's Scented Tips
Peanut Butter Cookies
Makes 3½ dozen.
Ingredients
2 cups flour
½ tsp baking soda
¼ tsp salt
1 ¼ cups dark brown sugar
1 ¼ cups white sugar
1 cup butter
3 eggs
2 tsp vanilla extract
1 cup peanut butter
Directions
1. Preheat the oven to 300° F.
2. With a wire whisk, combine flour, baking soda, and salt. Mix well.
3. In a separate bowl, blend dark brown and white sugars with an electric mixer. Add in butter and mix until it forms a grainy paste. Add eggs, vanilla extract, and peanut butter. Mix until light and fluffy.
4. Add in flour mixture. Do not overmix.
5. Drop by rounded spoonfuls onto ungreased cookie sheets. Using a fork, press a criss-cross pattern on each cookie. Bake for 20 minutes until slightly brown around the edges. Transfer cookies to a wire rack for cooling.
